    What? Are those grilled cheese sandwiches in place of buns?

    What’s all this brouhaha about the best vegetarian burger? Everyone knows it’s the Valley Vegetarian Burger. So why even look elsewhere?

    Can’t say it’s super healthy, but it is nutritious. Most of all it’s tasty. The combination of zesty guacamole, extra sharp cheddar cheese, blue cheese, red onion and roasted red pepper is a perfect complement to the vegetarian Grillers.

    Here’s my signature burger recipe with grilled cheese sandwiches in place of hamburger buns. Seriously satisfying! Be sure to have a stack of napkins on hand while eating.

    1 red bell pepper
    4 slices American cheese
    4 slices whole-grain sandwich bread
    3-4 tablespoons butter
    3 ounces blue cheese (crumbled)
    1/3 cup guacamole
    3 ounces aged white cheddar cheese (grated)
    1 slice red onion (¼-inch thick slice)
    2 Morningstar Grillers

    Trim stem from bell pepper, cut in half and remove veins and seeds. Grill for approximately 7 minutes or until skin blackens and peels. Turn over and grill for another 4 minutes. Set aside.

    Butter one side of all four slices of bread. Place 2 slices of American cheese between two slices of buttered bread and place on grill – butter side down. Repeat for remaining bread and American cheese. Grill cheese sandwiches until they are gently browned on each side.

    Heat Grillers in a microwave on high for 2 minutes.

    To assemble, crumble blue cheese on top of one of the grilled cheese sandwiches. Place one of the grillers on the blue cheese and spread guacamole on top of the griller. Place the second griller on top of the guacamole. Place the cheddar cheese on top of this griller followed by the roasted red pepper and the thick slice of red onion. Top with remaining grilled cheese sandwich and serve while still warm.
